  1. Peel the asparagus, cut into 3cm pieces and cook in salted water slightly mixed with butter until al dente.
  2. Strain and fry in a pan with butter and olive oil for 2 minutes. Mix eggs with milk, season with salt and pepper, add to the asparagus and let set.
