  1. For the sauerkraut soup with potatoes, first drain the sauerkraut well and cut it a little smaller.
  2. Now peel and finely chop the onion and garlic. Wash the peppers and cut into thin strips. Wash, peel and dice the potatoes.
  3. Sauté the onion, garlic and paprika in a saucepan with oil, then add the sauerkraut and potatoes. Peel off with the soup and season with salt, pepper and caraway seeds. Simmer gently for about 30 minutes.
  4. In the meantime, wash, drain and finely chop the parsley. When the vegetables are soft, puree them with the hand blender. Stir in the parsley and cream and heat briefly.

Tips on the recipe

You can garnish the soup with salmon strips or bacon cubes.
