0.5l Vegetable broth
0.25l milk
250G Potatoes
50G spinach
200G Emmentaler, grated
2Tbsp cream

  1. First peel the onion and chop it into fine cubes. Cut the leek into strips and the beets into small cubes. Melt the butter in a saucepan and sauté the diced onions, leeks and beets.
  2. Deglaze the whole thing with the vegetable stock and bring to the boil briefly. Then add the milk and cut the potatoes into slices. Then add the potatoes and simmer covered for 20 minutes.
  3. Finally add the spinach and pour the grated Emmentaler cheese over it. Keep simmering until the cheese has melted. Then add the cream, season with salt and pepper and serve immediately.
