Cook rice

Rice is a staple food for billions of people, but is only a side dish in Europe. But rice is much more, because the small grains are true quick-change artists. You can prepare them heartily, exotic and rice is simply delicious as a dessert. Find out more about grain from the water.

Rice varieties - the choice is yours!

Rice is traded in very different types and varieties. The most common are:

  • Brown rice or brown rice (whole grain)
  • White rice (polished)
  • Parboiled rice (polished)
  • Wild rice
  • Rice noodles and rice leaves
  • Red rice (fermented or red-skinned)
  • Black rice (the rice of kings or purple rice)

Depending on the shape of the tasty grains, rice is divided into round grain, medium grain and long grain.

The origin makes the difference

Similar to wine, the growing conditions, soils, climate and water contribute to the characteristic rice taste. The long-grain favorites are jasmine rice from Thailand and basmati rice from the foot of the Himalayas. While the Basmati has an earthy, woody taste, the jasmine has floral accents.

Many a rice is wrongly named because it is not a child of the rice family. This applies to wild rice, which is the fruit of a panicle grass. It stands out from the price of rice and compensates for the higher price with its fine nut taste and higher levels of protein, magnesium, zinc and iron.

You can cook rice using the following methods:

  • Cooking pot (swelling method and water method)
  • Rice cooker
  • Steamer
  • microwave
  • Bamboo basket

The preparation in the steam cooker works according to another principle, with the hot steam causing swelling. Some steam cookers have a separate rice button. If this is not available, an imperforate, flat container is best.

The bamboo basket used in Asia is an extremely gentle method of steaming.

The right rice water ratio

  • For white rice varieties such as jasmine rice and basmati rice: 1 part rice and 1.5 parts water. ie 1 cup of rice and 1.5 cups of water.
  • For whole grain rice such as whole grain basmati or natural rice: 1 part rice and 2 parts water. ie 1 cup of rice and 2 cups of water.
  • For 2 people you need about 1 tea cup of Basmati rice (about 200g)
  • Place the rice in a bowl and wash twice - drain through a sieve.
  • Then put 1.5 times the amount of water (i.e. 1.5 teacups) together with the rice in a saucepan and add a pinch of salt.
  • Let it soak for 10 minutes.
  • Switch on the cooker and as soon as the water boils, set the cooker to a medium heat setting and let the rice simmer for about 15 minutes with the lid closed until the water has evaporated.
  • For 2 people you need 1 tea cup of Basmati rice (approx. 200g).
  • Place the rice in a bowl and wash twice - drain through a sieve.
  • Then add about 6 times the amount of water (1.2l) together with the rice in a saucepan and add a pinch of salt.
  • Switch on the stove and as soon as the water boils, heat the stove to a medium heat setting and let the rice simmer for about 15 minutes without a lid.
  • Then pour the water through a sieve and drain the rice.
  • To evaporate the rice with a piece of butter, put it back in the hot pot and stir briefly until the butter has completely dissolved.
  • Wash the rice twice and drain through a sieve.
  • Place the rice in the appropriate, non-perforated cooking container.
  • Now add 1.5 times the amount (1.5 cups) of water.
  • Add a little salt and stir.
  • Set the steamer to 100 degrees.
  • Depending on the type of rice, the duration of the cooking process also depends - 120 g basmati rice approx. 15 min., 120 g jasmine rice approx. 20 min., 120g risotto rice approx. 30 min., 120g whole grain rice approx. 30 min., 120g Wild rice about 40 minutes.
  • For this you need a microwave-compatible container with a lid.
  • First wash the rice twice and drain through a sieve.
  • Then put the rice with the water in a microwave-safe container with a lid - the water-rice ratio is 1: 1.5.
  • Depending on your taste, you can season the rice with salt and butter before cooking.
  • The cooking time in the microwave depends on the amount of rice. A cup of rice (approx. 200g) takes approx. 9-10 minutes at 800 watts.
  • This information may differ depending on the rice cooker.
  • For 2 people, wash 1 cup of rice well and drain through a sieve.
  • Now add the rice together with 1.5 times the amount of water to the rice cooker and season a little with salt.
  • Now close the rice cooker and start the rice program (depending on the device).

The rice is first cooked in oil, spices and vegetables, infused with white wine or broth several times and then refined with butter and parmesan cheese.

As a side dish, 60 g of rice are charged per head. For milk rice and risotto, it can be 100 g. 120 g basmati and jasmine rice take 15-20 minutes. The same amount of natural and whole grain rice are ready after 30 minutes. It takes 40 minutes for 120 g of wild rice.

The noble purple rice (black rice) is soaked in water beforehand and strained for hours or even the following day and cooked for 30 to 40 minutes.
